Generally speaking you can cursor over an item and get a quick indication of the quality of an item compared to your currently equipped item. That is not all to consider, but it is a decent first step. Knowing if an item will add to or take away your power to kill or your general survivability as a percentage is shown.

To break it all down for you: Given equivalent levels, Orange and Green items are the best, followed by yellow, followed by blue, and last white, which is the worst quality gear. those are items you can only equip on your followers. weapons in there are for the scoundrel, tomes are for the Templar, and the other stuff (mirrors etc) are for the enchantress. To equip your follower you open up the inventory screen, press R1 until you get to your follower and equip items that way.
