I tried everything you mentioned but nothing would allow me to replay missions. Add in the fact I can get the Online cars into the story (via ScriptHook V + Enhanced Native Trainer) and mod it as with past GTAs and the replayability never goes away, even if the story gets tedious in some places.

Use the Dpad on your controller to scroll down to “ Replay Missions ” and press A Xbox or X PS3 to select. A list of all the missions you have accomplished will be displayed. Scroll through this list and select the mission you would like to replay.
