A week is only long for a big town/city. When I visited my parents (2000 people village) it stayed a week too in summer and the gym is placed pretty much in the center right at the main road. I think if you find gyms away from a city and the road than you make it gold.
Some stay for 60. But I’ve even seen some stay for 2 hours like a Lickitung near my house and an Aerodactyl during that rock event in may. The 60 minute spawn point is shared (or so it seems) with the plain 30 minute spawn point.

Poffins can be purchased from the Shop using 100 PokéCoins. Poffin will also keep your Buddy full, stay on the Map, and stay Excited for longer (early research suggests 6 hours). Although it’s not necessary to buy Poffins, if you plan to level up multiple Buddies at the same time, it could be useful to have a few in your inventory.
Defender Bonus is one of the profits from defending Gyms as up to 50 free PokéCoins can be earned in a day for keeping Pokémon in Gyms. The longer the Pokémon stay on the Gym, the more PokéCoins will be earned. For every 10 minutes a Pokémon occupies a gym, 1 will be added to the Trainers’ potential defender bonus. Trainers should give Pokémon treats often to keep …
Yeah, no official limit. For the longest my personal record was around 2 hours, but then I got a lapras and immediately put it in a gym. It ended up staying there for 3 or 4 weeks I think. Yay for free coins. Boo because it was 400cp higher than my second best pokemon and was stuck in …
