Generally you want just enough Vitality to ensure that you don’t die (too often), and you spend the rest of your paragon points on Strength, as that provides damage (1 point of STR = 1% damage) and mitigation (1 point of STR = 1 armour). If you want to play defensively, aim for 1,000,000 HP. If you want to play normally, aim for 750,000-850,000 HP.

Vitality is a bit thornier, as the amount of additional HP you get per point of Vitality increases with level. To find out, simply mouse over the Vitality stat on the character sheet. The tooltip will tell you how much HP you gain per point of Vitality.

At those health and armor levels you can see that 1 point of vitality is worth about 14.1 points of armor. Now instead of increasing your vitality, we increase your armor by 1410 points (14.1 points for each increased point of vitality in the previous example).
